Vitamin B6 (also called pyridoxine, especially when listed on a liquid vitamin B6 supplement) is a water-soluble vitamin in the vitamin B complex group. As with most of the other B vitamins, vitamin B6 plays an important role in metabolism; it is involved in numerous enzymatic reactions, most of which help break down proteins and their constituent amino acids. Other such reactions break down glycogen (a complex energy storage molecule) into glucose (simpler energy molecules). B6 is also involved in the cognitive development and immune function. Vitamin B6 can be found in various foods, including fish, poultry, potatoes, starchy vegetables, and many non-citrus fruits. Vitamin B6, along with other B vitamins, is generally not used in the fortification of enriched flour, which has been refined and, ipso facto, stripped of valuable nutrients. Thus, products made with enriched flour generally lack B6, but products made with whole grain flour virtually always contain natural B6, as well as other vitamins, fiber, and essential trace minerals.
Vitamin B6 deficiency is uncommon in the U.S. and developed countries, but its symptoms include anemia, cracks at the corners of the mouth, scaly skin on lips, and a swollen tongue. Serious vitamin B6 deficiency may manifest itself as depression or a weak immune system. In infants, low levels of vitamin B6 have been even been linked to seizures. Vitamin B6 deficiencies are generally easy to correct with dietary alterations or a liquid vitamin B6 supplement.
